Olan

Olan is a dish that is part of the Kerala cuisine of the state of Kerala in South India. It is prepared from white gourd, coconut milk and ginger seasoned with coconut oil.
























Ingredient
1 cup white Pumpkin - cut into 1 inch squares
1-2 Green Chillies
1/2 cup raw Plantain(Pachakkaya) - Skinned and cut into thin round pieces
3-4 long beans , cut into 1 inch length pieces.
1/2 cup Coconut milk
Salt - as required
1/2 tbs coconut oil
Method
Cook Pumpkin, plantain and the beans together with salt and enough water to just cover the vegetables. 
Cover the pot with a lid so that the water does not evaporate. Cook until the vegetables are soft.It takes about10-12 minutes. Add the green chilliesand coconut milk and continue cooking at low flame for few more minutes. Adjust the salt if required. Do not boil at this stage. Pour the coconut oil over the curry,mix well and remove from heat. Serve with rice as a side dish.
